Tasting notes

Appearance
Deep red with violet-ruby tones.
Nose
Red fruit recalling strawberries and plum, together with some jam and vanilla; softer and more floral than the Cabernet Sauvignon.
Palate
Balanced and silky, with good persistence and gentle, food-friendly tannins.
Finish
Very pleasant and fruity.

Production & ageing

Harvest
Hand-harvested between 22 and 25 April, in the early morning, in 20 kg plastic crates.
Fermentation
Alcoholic fermentation lasts 7–10 days at 26–28 °C: three daily pump-overs down to 1.020 density, then two daily down to 1.000, with a délestage during fermentation. Malolactic fermentation with indigenous bacteria.
Maceration
72-hour cold pre-fermentation maceration at 5 °C; 4–7 days post-fermentation maceration. 10% colour saignée.

Selected yeasts.

The land

Mendoza

Andino's Mendoza producer, Pannunzio Wines, sits at 800 m a.s.l. in Barrancas, Maipú, a temperate arid enclave with a daily thermal amplitude of up to 20 °C, which drives slow, balanced ripening, and only about 200 mm of rain a year. The terroir has two soil profiles: silty with a rocky, alluvial-stone structure from the Mendoza River to the north, and deep sand to the south.
