"Munay" is a Quechua word meaning "love", the first principle of the Andean way of life. The project seeks to honour this ancestral respect for nature through precise winemaking, interpreting the landscape of Cafayate with intention and meticulous care, to make wines that are a faithful mirror of their place of origin.
The land
Place & terroir
The Calchaquí Valleys of Salta, one of the highest wine regions in the world. The thin high-altitude atmosphere allows greater ultraviolet radiation, so the vine develops thicker, darker skins; the result is wines of deep colour, high polyphenol concentration and structured tannins.
A wide day-to-night temperature swing allows full ripeness without loss of freshness.
Winemaking & production
Manual harvest of high-altitude Cafayate fruit, with balanced yields to preserve freshness and direct varietal typicity.
Manual harvest; fermentation with selected yeasts; malolactic fermentation; extended skin maceration; on the reds, a light touch of oak that adds complexity without covering the fruit.
Sustainability
The arid, windy, high-sun climate prevents fungal disease and allows sustainable viticulture with minimal use of agrochemicals, for pure and healthy fruit at harvest.
