Production & ageing
- Harvest
- Hand-harvested on 15 February, in the early morning when temperatures are lowest, in 20 kg plastic crates.
- Fermentation
- Grapes are pressed to preserve freshness, varietal typicity and natural acidity, then fermented in stainless-steel tanks where the temperature never exceeds 16 °C. No sulphur dioxide is added until the end of malolactic fermentation.

The land
Mendoza
Andino's Mendoza producer, Pannunzio Wines, sits at 800 m a.s.l. in Barrancas, Maipú, a temperate arid enclave with a daily thermal amplitude of up to 20 °C, which drives slow, balanced ripening, and only about 200 mm of rain a year. The terroir has two soil profiles: silty with a rocky, alluvial-stone structure from the Mendoza River to the north, and deep sand to the south.
